This delicious spicy black bean and brown rice chili recipe provides all the protein you need and is so easy to make! We just can't get enough of it plus it's quick to prepare which leave you enough time to spend relaxing! Here's how you can make it!

This hearty chili offers a mix of brown rice, black beans, peppers, and onion. Feel free to keep it very healthy or you can cheat a little (like I did) and add your favorite shredded cheese and maybe even a little dollop of sour cream! YUM!

The best thing about this recipe is the taste! Although, the second best thing is the cost! Most of these ingredients are pretty inexpensive.

Heat oil in a big soup pot over medium-high heat. Add onion, bell pepper, garlic, chili powder, cumin, oregano, salt and pepper, and cook, stirring occasionally, until tender, around 5 minutes.

Add beans, tomatoes, chipotle, broth, and brown sugar. Bring to a boil over high heat, reduce heat, cover, and simmer for 25 minutes.

Stir in cooked brown rice and heat through. Remove from heat and let sit for 10 minutes to thicken up a little. When done squeeze a little lime juice in each bowl and garnish with avocado and cilantro. You can also add your favorite shredded cheese and even a dollop of sour cream! ENJOY!

  • 2 tbsp extra virgin olive oil
  • 1 large yellow, red, or orange bell pepper, chopped
  • 5 cloves garlic, minced
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1tsp salt
  • 1 tsp pepper
  • 2 15 oz. cans of blk beans, rinsed and drained
  • ½ -1 canned chipotle peppers in adobo sauce, minced (add the whole can if you like it spicy!)
  • 2 cups veggie broth
  • 2 tsp light brown sugar
  • 2 cups cooked brown rice
  • 1 lime
  • avocado (as much as you like)
  • fresh parsley, chopped (as much as you like)
