We were talking about favorite recipes this morning.  David loves enchiladas. It's his Mom's recipe and they are super easy to make. I never got to meet David's Mother but I picture her laughing at me every time I make them. I make a horrible mess of the kitchen when I make them.

I will share the recipe with you but I would LOVE for you to share your favorite recipe with me.

Enchiladas

Lanell Mace (modified)
350° - 30 minutes

  • 1 lb. ground beef
  • 1 large can chili
  • 1 lb grated American Cheese (I get a block of yellow cheese from the deli and grate it)
  • 1 medium onion chopped
  • 15 yellow corn tortillas (approximately)
Brown the ground beef and season to taste with salt and pepper. (I usually add a little taco seasoning to it.) Heat chili in medium-size pan on low heat. Lay tortillas in chili just to coat (both sides). Place them, one by one, in a 9 x 13 baking dish. Fill with a small amount of beef, onion and cheese. Roll the shell up and press it against the end of the pan. Fill the pan with rolled tortillas. Top with remaining chili and cheese. Bake 30 minutes in 350° oven. Serve with salad and hot sauce.
