Yesterday, we had a Baked Potato Bar at our office.  It was amazing!  So many toppings to try on top of a perfectly baked potato.  I ALMOST wish we had waited until today, because, when the cold front hit this morning, nice piping hot, stuffed to the rim baked potato would have certainly hit the spot!

There is just something about cold weather and comfort food.  The last time we had a work-from-home day, I felt like I cooked all day long!  French toast for breakfast (brunch), and the turkey and dressing crock pot casserole.  Both were top-notch.  I guess that's why with the promise of cold weather to come, I'm busy searching for quick, easy, comfort food recipes for the next few days!

I just bought an Instapot.  I bought it because I had heard that making meals in an Instapot was so much faster, and you don't lose any of the flavors when you cook faster.  You had me at fast.  I work long hours, and the last thing that I want when I get home is to have to wait 2 hours on a meal.  I ordered an Instapot cookbook for beginners and I have dog-eared several pages to try, but I was directed by a good friend to a website with GREAT recipes, and it was there that I found what will be my first try of quick dinner in my Instapot.

The Salty Marshmallow has One-pot recipes, but oh so much more.  They all seem to be pretty easy and for my first experience with my new kitchen toy, I opted for the easier the better, and of course, because of the weather, it has to be comfort food.

Who's ready for Chili?  Can you believe that I have NEVER made chili before?  And with National Chili day coming up on Friday, I need to have some experience in the subject of the perfect ChiliCritter and I, from KLAW's Morning Crew,  just served as judges at Guitar Bar's inaugural Chili Cook-off, and the week before that I along with my husband and State Representative Trey Caldwell acted as judges for the 6th Annual Geronimo Chili Cook-off.  I may not have the making experience, but I do have the tasting experience.

How do you like your chili?  I don't like tomato chunks in my chili.  Beans are fine, as long as they are not too big.  And, my meat pieces have to be bite-size.  What is a mush have in your chili? Comment below!

The Frozen Wichita Mountains

When Southwest Oklahoma gets a rare blizzard with serious snowfall, the mountains take on a fresh and stunning look. It's something we all get to experience thanks to the video and camera work of a few awesome locals with a stellar YouTube channel, The Pemberton Boys. They flew their drones and explored the mountains across SWOK while the views were grand, putting it online for everyone to enjoy.
