This recipe reminds me of potato pancakes! The only difference is that these fritters are way healthier!

This low fat recipe makes 24 servings, so it’s perfect for an appetizer. It can also be served as a side dish or main course.

These are very simple and healthy ingredients. They can be found at any market. Feel free to add your own spices to this recipe.

In a large bowl, add your cooked cauliflower, flour, garlic, eggs, cheese, parsley, salt, and pepper. Once you’ve stirred a little, add your hot water. Adding the water makes it denser; slightly more than waffle or pancake batter.

On medium-low heat, heat oil in a large skillet. You can use a measuring cup to form the patties or just your hands. Obviously, I used my hands and it worked just fine.

Drop patties into hot oil. You should be able to fit 3-4 fritters in at one time. Cook until golden brown, around 3-4 minutes on each side. Add a little more oil to the pan and repeat with remaining batter.

Serve this cauliflower dish with some grilled shrimp and a beautiful salad for a healthy delicious meal!

3 cloves garlic, minced

1 cup whole wheat flower

2 eggs

½ cup shredded Parmesan or Romano

¼ cup fresh parsley, finely chopped

¼ cup hot water
