Heat oil in a big soup pot over medium-high heat. Add onion, bell pepper, garlic, chili powder, cumin, oregano, salt and pepper, and cook, stirring occasionally, until tender, around 5 minutes.

Add beans, tomatoes, chipotle, broth, and brown sugar. Bring to a boil over high heat, reduce heat, cover, and simmer for 25 minutes.

Stir in cooked brown rice and heat through. Remove from heat and let sit for 10 minutes to thicken up a little. When done squeeze a little lime juice in each bowl and garnish with avocado and cilantro. You can also add your favorite shredded cheese and even a dollop of sour cream! ENJOY!

  • 1 large yellow, red, or orange bell pepper, chopped
  • 5 cloves garlic, minced
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1tsp salt
  • 1 tsp pepper
  • 2 15 oz. cans of blk beans, rinsed and drained
  • ½ -1 canned chipotle peppers in adobo sauce, minced (add the whole can if you like it spicy!)
  • 2 cups veggie broth
  • 2 tsp light brown sugar
  • 2 cups cooked brown rice
  • 1 lime
  • avocado (as much as you like)
  • fresh parsley, chopped (as much as you like)
